On 14 September, the UK’s first authentic sake brewery, called Dojima Sake Brewery, opened at Fordham Abbey, just a short car ride from Cambridge. Professor Adolphson took part in the ribbon-cutting ceremony and said a few words. Not only are we happy to see an original Japanese business being established so close-by, but we are also delighted at the prospect for future collaborations, since the owners, the Hashimoto’s, also plan to add a cultural centre. Dojima benefits from 500-year old traditions of making sake, which they combine with 21st century technology.
